It plays a critical flavouring role in Indian vegetarian cuisine by acting as anÃƒÆ’Ã¢â‚¬Å¡Ãƒâ€šÃ‚Â umamiÃƒÆ’Ã¢â‚¬Å¡Ãƒâ€šÃ‚Â enhancer.
